Acerum comes from the contraction of the Latin words "Acer" meaning maple and English "Rum" meaning Rum.
Quebec is perhaps the only place in the world currently making spirits from maple sap. It needs to be made solely from Quebec maple sap, fermented, distilled, and bottled at a Quebec distillery, and be at least 35% ABV.
